Love a cheats Stroganoff! I also love to use chicken instead of beef! Super easy! Super delicious and only a few ingredients and once prepared around 15 – 20 minutes and you have dinner on the table! Great for busy people like me to throw together at the end of the day, it also freezes well in portions. You can marinate your chicken in snaplock bags and freeze also, this is a real time saver! (See pic below! I marninate with different flavours and freeze for later)
400 grams of Chicken Breast diced
150 grams of Button Mushrooms sliced
2 tablespoons of Russian for Dinner Spice Blend
1 teaspoon of Field Mushroom Salt
1 cup of So Good Almond Coconut milk unsweetened (Use any almond milk you like, I just had this on hand)
1 tablespoon of Cornflour
What to do:
Place the chicken and Russian for Dinner Spice Blend in a snaplock bag and shake to coat the chicken. Marinate over night if possible or for at least an hour to infuse flavours.
Heat a non stick fry pan to medium heat (I prefer a cast iron pan) Saute the mushrooms and set aside. Combine the cornflour and Almond milk until the cornflour dissolves. Brown the chicken on both sides, (do not cook through otherwise at the end of cooking the chicken will be tough)
Add the almond milk to the pan, stir continually and simmer until the sauce is thick. Sprinkle the Field Mushroom Salt over the top and stir to combine. Serve with whatever you like! I serve with veggies instead of pasta which makes it a much lighter meal.
