Chicken Fajita’s!

Whipped up Fajitas this week! Ready in under 10 minutes, fast easy and delicious! This smoky Mexican spice blend is amazing with chicken or beef. Tonight it’s chicken! I usually cook from scratch but I had some left over cooked chicken breast to use up. I cooked the onion with the EVOO and then added the spice blend stirring to combine. Then added the chicken and the lime juice. If you are using uncooked chicken use the recipe below:

500 grams of diced chicken breast
1 small Onion Sliced
1 – 2 Tablespoons of YIAH Fajita Spice Blend
1 Tablespoon YIAH Intense Garlic EVOO
1 – 2 Tablespoons of Lime Juice

Marinate the chicken with the spice blend and olive oil in a snap lock bag and let it sit in the fridge for at least 30 mins. (I generally do this before work so that after a long day I can just come home and cook) Saute the onion and then add the chicken. Once the chicken is browned and cooked through add the lime juice and stir to combine.. that’s it! You can add whatever else you like such as mushrooms or capsicum. Heat your wraps and add the chicken, some lettuce, tomato cheese and salsa.
