I LOVE Chicken Stroganoff!! It doesn’t have to have all of that creamy sauce to be flavoursome! Here is a slightly healthier version that will not disappoint! Serves 2
250 grams of diced Chicken Breast
200 grams of Greek yoghurt
400 grams of Button Mushrooms sliced
2 tablespoons of Russian For Dinner Spice Blend
Serve with steamed veggies, zoodles or pasta!
What to do:
Add 100 grams of the yoghurt to a snap lock bag and add the chicken and 1 tablespoon of the Russian For Dinner Spice Blend. Marinate overnight. (This is the juiciest, most tender chicken you will ever eat!)
Heat a on stick fry pan to medium heat and brown the chicken on both sides. Set aside. In the same pan sauté the mushrooms.
Return the Chicken to the pan add the other tablespoon of Russian For Dinner Spice Blend and the other 100 grams of yoghurt. Give it a good stir to combine and bring to a simmer for a few minutes.
Serve with veggies of choice, zoodles or pasta if you like. I prefer the veggies! So good for you and so filling! You can also have more veggies than pasta!
