This is the yummiest! How easy is it and very few ingredients! Winner Winner Chicken Dinner! Serves 2
250 grams of diced Chicken Breast
1 – 2 tablespoon2 of Curry Korma Spice Blend
400 grams of choice of veggies – I’ve used Cauliflower, beans, carrots, zucchini and red onion
165 ml of Coconut Milk
Combine the diced Chicken Breast with a tablespoon of Curry Korma Spice Blend Stir to combine, let it marinate overnight if you have the time!
Heat a non stick fry pan and brown the chicken. Set aside.
Add the veggies to the pan and sprinkle over the other tablespoon of Curry Korma Spice Blend Sauté until just tender.
Return the chicken to the pan, add the coconut milk and stir to combine. Bring to a simmer and simmer until the milk thickens.
Serve and Enjoy! SO good the next day for lunch!
