Easy Coconut Chicken Curry

Easiest throw together dinner ever and it freezes well! Add extra veggies you enjoy. I’ve just used what I had on hand. This has made 3 serves for me.. Enjoy!


1 chicken breast diced

1 tablespoon of coconut oil

1 onion diced

1 carrot julienne

Handful of green beans ends removed

3/4 cup of frozen peas

1 tin of coconut cream *tip.. put in the fridge and just use the cream

curry of choice, I’ve used a sri lankan coconut curry spice blend *tip.. any curry paste or blend you like

What to do

Heat a fry pan and add the coconut oil. Add the spice blend and stir, cook for a minute or 2 until fragrant. Add the onion and stir to coat the spices, cook until soft. Add the chicken and brown on all sides. Remove from the pan and set aside. Add the coconut cream and veggies. Simmer until the cocount cream has thickened and add the chicken and onion back into the pan. Stir to combine and simmer until the chicken is cooked through.

Serve with steamed rice if you wish, I love it on it’s own without the rice very little carbs to burn off!
