Slow Cooker Roast Chicken

- Roast Chicken Spice Blend:
- 2 teas smoked paprika
- 1 teas onion powder
- 1 teas garlic powder
- ½ teas ground cumin
- ½ teas ground nutmeg
- ½ teas celery seeds
- ½ teas of dried parsley
- ½ teas cracked himalayan salt
- Pat the chicken dry with paper towel
- Mix all of the spices together and sprinkle all over the chicken
- Place a trivet in your slowcooker and sit the chicken on top
- Cook on the high setting for 1 hour
- Add veggies of your choice under the trivet
- Cook on low for 4 hours or until 170c or until you insert a skewer and the juices run clear
- Place the chicken and veggies on a tray and place into a preheated hot oven for 10 - 15 minutes to crisp up the skin of the chicken
- Make gravy from those delicious juices left in the bottom of the slowcooker
