There is nothing more delicious than Oven Baked Chicken! I DO NOT MISS FRIED AT ALL! First things first, I slice my chicken breasts in half to cut down the cooking time. Marinate them for a few hours in No Fat or Low Fat Natural or Greek Yoghurt.
Preheat the oven to 180 C before you start coating the Chicken.
I make my own Breads Crumbs, (store bought are fine if you don’t have the time. I just prefer as much homemade as I can handle ) I prefer to make them from multigrain/soy & linseed bread and often Gluten Free as well. Add some Parmesan and dried Italian Herbs to your crumbs. I add approx 1/4 Cup of Parmesan and 1 Tablespoon of herbs to 1 Cup of Bread Crumbs.
Simple coat the yoghurt marinated Chicken in the crumbs, sprinkle with a spicy season all mix and bake in a preheated oven at 180 C for approx 45 minutes to an hour depending on the size of your Chicken. Turn over half way through cooking. If you don’t have a wire wrack like this one you can simply pop onto a tray with baking paper.
