Mexican Turkey & Zucchini Ribbons

I love this zucchini ribbon recipe! It’s so easy to prepare and has so much flavour with very few ingredients! Great for all stages of my Gut Health Program


100 g zucchini ribbons or zoodles (you can purchase a hand held zoodler from most kitchen shops)

80g mushrooms

20g roasted capsicum

100g turkey mince

1 teas Souly Guacamole Spice Blend

splash of soy sauce to serve

What to do:

Heat a cast iron or non stick pan and dry fry the mince and mushrooms until the mince is cooked and mushrooms are tender. Add the Souly Guacamole Spice Blend and capsicum and stir to combine. Add your zucchini right at the end and only cook for a few mintues to heat. Service with a splash of soy sauce.

** You can make your zucchin ribbons or zoodles in advance – they will keep in a snap lock bag in the fridge for a few days
