I LOVE Cauliflower Rice and make it most weeks using different proteins and flavours!
*TIP – Non stick pan with a lid will be useful
200 grams of Cauliflower Rice
70 grams of button mushrooms sliced
30 grams of Roasted Capsicum
30 grams of Spring Onion sliced
70 grams of Zucchini diced
1 tablespoon of Satay Mas Spice Blend
2 teaspoons of EVOO
250 grams of diced Chicken Breast
What to do
Add the chicken, EVOO to a freezer bag and add the Satay Mas Spice Blend. Give the bag a good shake to coat. Heat a non stick pan to medium heat and cook the chicken until brown on each side. Remove from the pan.
Add the mushrooms, spring onion and zucchini and saute until semi-soft. Add the Cauliflower and add a splash of water. Stir to combine and pop on the lid. Turn to medium low heat and stir occasionally. Cook until the cauliflower is semi-tender, around 5 minutes. Add the cooked chicken and roasted capsicum and stir to combine.
Super easy, super tasty and great to re-heat for later.
