A very filling breakfast wrap I made for breakfast yesterday
Ingredients:
1-2 free range eggs
1/2 Small Zucchini
100 grams of sliced mushrooms
50 grams of capsicum
80grams of steak (I used kangaroo fillet)
2 teas Chive & Onion spice blend
Method:
Blitz the zucchini, eggs and a teas of the spice blend in a nutri bullet or blender. Pour into a preheated frypan that has been lightly sprayed with cooking spray ( you can also line with baking paper) Let it cook for a few minutes until it is easy to flip. Flip and cook on the other side. Remove from the pan and set aside.
Prepare your filling. Slice the steak and brown on both sides. Set aside. Add the capsicum and mushroom and the other teaspoon of spice blend. Sauté until golden and add the steak back to the pan. Stir to combine. Place to filling into your wrap and roll it up.
Recipe tip: In place of zucchini use a handful of baby spinach. I used zucchini because I ran out of spinach
