Chicken nacho’s! Yum Yum Yum!!!
Even the kiddies can prepare this one!
Guacamole: 1 avo mashed with 1 tablespoon of Yiah Guacamole Dip Mix and a splash of fresh lemon juice
The Chicken filling:
Saute 3 portabello mushrooms sliced, 1 red onion diced and 2 tablespoons of Yiah Fajita Spice Blend in a splash of Yiah Intense Garlic EVOO (would usually use our Yiah Taco Spice blend but ran out) Cook until fragrant. Add a tin of crushed tomatoes and simmer for 10 minutes, add approx 2 cups of cooked chicken and stir to combine. Pop into an oven proof dish top with cheese and into the oven. Serve with homemade tortilla chips and some sour cream.
Tortilla Chips:
EASY! Slice tortillas, brush lightly with Intense Garlic EVOO and pop into the oven for approx 10 minutes or until crispy.
