How easy are these recipes and SO good!! Banana Cake is the Cake in the featured image. I have iced with cream cheese frosting and chopped walnuts. In the Imagine below in the bar tin is the Carrot Cake. Both recipes are from an old school cookbook with a few little modifications.
Banana Cake….
125g Butter Softened…
3/4 Cup of Sugar
3 Bananas
2 Eggs
pinch Salt
1/2 Teas Bi Carb
2 Tbs of Skim Milk
2 Cups of Self Raising Flour
Cream the butter and sugar and then add the eggs one at a time mixing well. Add the mashed Banana and mix well. Fold in the flour, salt and bi carb and milk. Bake for 30-45 minutes in a moderate oven.
You can also use this as a muffin recipe just cook for less time.
Carrot Cake…
3 Eggs
1 Cup of Sugar
1/2 Teas Bicarb
1/2 Cup of vegetable oil
pinch of salt
2 Cups of finely grated carrot
2 Teas baking powder
1 1/2 cups of Plain flour
2 Teas Nutmeg
1/2 cup of chopped baking walnuts
Mix everything together to form your batter and bake in a moderate oven for 45-60 minutes..
