Herbed Almond Crackers – Low Carb/Gluten Free Goodness!

Getting my health kick on before the New Year! These are so easy to make and a great alternative to your every cracker!

Ingredients

2 Cups of Almond Flour (Mine is homemade so a little more texture)

1/2 Cup of Tasty Cheese

1 Free Range Egg

1 Tablespoon of mixed Italian Herbs

1/2 Teas of Garlic Powder

1/2 Teas Ground Chilli

1/2 Teas Smoked Paprika

1/2 Teas Ground Cumin

1/4 Teas of Cracked Himalayan Salt

What to do…

Add the almond flour, herbs, salt and spices to a mixing bowl and combine. Add the beaten egg and start mixing with a spatula. Melt the cheese in the microwave until smooth, approx 30 seconds in a microwavable mug. Add to the bowl and mix well to combine, best to do this quickly while the cheese is still runny! Once combine knead the dough in your hands. (You can use a hand mixer for this whole process but it is just as simple using a spatula and clean hands!) Roll out thinly between sheets of baking paper. Slice into square or triangles and place on a baking tray lined with baking paper. Bake in a pre-heated oven at 180℃ for 10 – 15 minutes depending on how thin you roll.
