This dish was SO good! and SUPER easy to prepare! It’s keto friendly but don’t ask about the macros (protein, carbs and fat) as I am not keeping count. I bought the chicken breast already wrapped in bacon with the herb and garlic butter on top, I would normally prepare these myself but decided on a lazy day! They are a small serve at approx 60 grams secured with cooking twine. Each in total but this is more than enough for one person and very filling. Prepare the chicken first and then make your noodles.
Prepare the Chicken:
Brown the chicken on each side in the pan and then place in an oven proof dish and bake for approx 25 minutes
Ingredients and preparation for the Noodles:
150 grams of zucchini noodles
100 grams of sliced mushrooms
100 ml of cream
60 grams of cream cheese
50 grams of grated cheese
2 tablespoons of coconut oil
2 teaspoons of dried herbs
Heat a pan and add saute the mushrooms, then add the zucchini.
Remove the zucchini and mushrooms from the pan and set aside. To make the sauce add the cream, cream cheese and grated cheese to the pan and stir to combine as the cream cheese and grated cheese melts. Add the dried herbs and stir.
Add the zucchini noodles to your bowl. Take the cooking twine off the chicken and place on top. Drizzle the sauce over the top and enjoy! I sliced up the chicken and mixed it all up in the bowl. Nom Nom Nom!
