After a raid of the fridge and pantry here’s my winning recipe for today. I don’t normally use tinned soup in recipes but it was there in the pantry to be used. The man of the house bought it when I was away and he had a toothache.. Tinned soups can be a great recipe base for quick and easy meals.
Ingredients
1 Chicken Breast diced
1 tin of Chicken and Corn condensed Soup
1/2 cup of Cream
a handful of freshly chopped Parsley
10 Button Mushrooms sliced
1 Red Onion diced
1/2 head of a large Cauliflower
1 clove of fresh Garlic crushed
What to do:
Steam the Cauliflower until 3/4 tender and add to a baking dish. I use the microwave and steam fora round 4 minutes.
In a frypan saute the onion, garlic, mushrooms and chicken and load on top of the cauliflower.
Mix together the soup, cream and parsley and pour over the top.
Pour over the mixture to cover the other ingredients.
Top with Cheese and bake until the Cauliflower is tender, approx 30 mins at 180 c.
