Chicken & Bacon Rissoles

Another super easy dinner…. These make great burgers or you can serve with salad or veggies, yummy as meatballs with a creamy mushroom sauce. A really versatile recipe!

Ingredients:

500 grams of chicken mince

2 rashers if bacon

1 onion finely diced

1 clove of garlic crushed

1 free range egg

1 tablespoon of dried herbs (I love Italian! Fresh herbs are great too!)

1 tablespoon of pesto (Add your fave! I have tried Basil and Sundried tomato.. both YUM!)

Saute the bacon, onion and garlic and let it cool. Add your chicken mince to a bowl, add the cooled bacon, onion and garlic and crack in your egg. Add the dried herbs and pesto and mix well with your hands. Roll into patties. Heat a frypan to medium heat and spray with your choice of cooking spray. (I’m loving coconut at the moment) I like to use a frying pan with a lid or my hooded BBQ.   Brown on each side and side and then pop on the lid until the rissoles and cooked through. If you are using the frypan and serving with veggies, make a gravy with the pan juices..
