Chocolate Mousse Cheesecake

🤩 Chocolate Mousse Cheesecake in the fridge in under 10 mins (not including the time to make the mousse) AND I made the recipe up myself 😉

Thermomix Instructions:

Biscuit Base:

Packet of Chocolate Ripple Biscuits and 2 tablespoons of butter – 5 seconds speed 3 or until well combined. Press into a pie dish and put in the freezer for 5 mins to set while you make the filling.


Cheesecake Filling:

750 grams of cream cheese
100 grams of sugar
70ml thickened cream
1 1/2 teas gelatine dissolved in 1/4 cup boiling water – let it cool

50 g sugar
200 g dark chocolate (min. 50% cocoa), cut into pieces (2-3 cm)
100 g pouring (whipping) cream
4 eggs, separated
1 pinch salt

Cream cheese and sugar – 10 seconds speed 3
Add thickened cream and chocolate mousse – 10 seconds speed 5
Add dissolved gelatine -10 seconds speed 5

Pour into prepared base and top with grated chocolate. Place in the fridge to set.

Note: Be prepared to make another one 😉
