Ingredients
1 1/4 cups of olive oil
2 tsp vanilla essence
1 cup granulated sugar
1 cup lightly packed brown sugar
4 large eggs
1 cup of wholemeal plain flour
1 cup of white plain flour
2 tsp of baking powder
2 tsp of cinnamon
3 cups of grated carrot
150 grams of chopped walnuts
150 grams of cream cheese at room temp
1 1/2 cups of icing sugar
1 tbs of milk
1 teas of vanilla essence
squeeze of fresh lemon
Mix the olive oil, essence and sugars together in a large bowl. Add the eggs one at a time until mixture is creamy. Then add in 3 parts, wholemeal plain flour, white plain flour with the baking powder and cinnamon, until combined, add the grated carrot and chopped walnuts. Separate into two 8 inch greased and floured pans and then bake at 180’c gas for roughly 35 to 45 mins, check around the 35 min mark. Cool and then make the icing. Beat the cream cheese at room temp with the icing sugar, a squeeze of a lemon cheek and a tbsp of vanilla, and roughly a tbsp or two of milk. Ice the middle and top of cake and place in fridge or freezer asap to set.
