Beef, Bacon & Mushroom Casserole with Cheesy Cauliflower Mash

WOW…. I am a little amazed at what have I have achieved the last few weeks. I decided it was time to give something else a try to get things in check, lose some weight, get more sleep and feel more relaxed. A few weeks ago I started Morning Yoga thanks to my friend Fiona from Yoga Blue Australia who created a Facebook event with a 21 Day Challenge. This week I started the LCHF way of eating, amazingly I stuck to it all week with only one cheat day which started out unintentionally due to a work lunch. I thought it would be really difficult and I would crave all those delicous carbs, especially fresh bread from my local bakery which I might add has the most amazing bread! Not only was I surprised that I didn’t feel like the carbs, I am feeling energised from the morning yoga and having more restful sleep. Here’s what I made for dinner last night. A really simple dish that tastes amazing!

Ingredients for the Casserole:

800 grams of diced Beef

2 rashers of Bacon diced

I Onion finely diced

6 Button Mushrooms sliced

2 cups of Beef Stock

2 tablespoons of mixed Dried Herbs

2 tablespoons of Tomato Paste

1 tablespoon of Olive Oil

2 tablespoons of cornflour dissolved in 1/2 cup of water

Cracked Pepper and Himilayan Salt

Ingredients for the Cauliflower Mash:

1/2 head of Cauliflower

2 Tablepoons of Sour Cream

30 grams of freshly grated Cheese

1 tablespoon of dried herbs of choice (I have used a blend of dried onion and chives)

Cracked Pepper and Himilayan Salt

I made my casserole in the pressure cooker, you could use the slow cooker or the oven. Either way you have a delicious hearty meal.

Turn the pressure cooker on to the saute setting and add the olive oil. Saute the onion, mushroom, bacon and beef. Ensure the beef is browned on all sides.  Add the dried herbs and cover with the beef stock. Add the tomato paste and stir to combine. Season with salt and pepper. Put the lid onto the pressure cooker and set to setting 4 or follow the instructions for your pressure cooker or slowcooker.  Add the cornflour mix and thicken at the end on the saute setting without the lid on.

(If slow slowing cooking in your slowcooker or using the oven method use a frypan to saute the ingredients, add to the slower cooker or oven dish and then cover with the combined beef stock, tomato paste and cornflour mixture.  I’d go 6 hours on low for the slow cooker or approx 4 hours for the oven and then test the meat for tenderness) Cooking times may vary.

To make the mash, boil your cauliflower until tender, drain well and mash. Add the sour cream, grated cheese and herbs. Season with salt and pepper. Serve with your choice of steamed green veggies.
