Caramelised Onion, Cheese & Thyme loaf recipe 🤤
Two medium onions finely chopped
1 clove garlic crushed (optional)
1 tsp white sugar
1 tbs white balsamic vinegar
230g SR flour
1 cup grated cheese plus 1 tbs extra to sprinkle on top
1 tbs fresh thyme plus 2 extra sprigs for on top
1 egg
100ml sunflower oil
1/2 cup milk
knob of butter
splash of olive oil
Method:
Saute the onions & garlic with the knob of butter & splash of oil. Cook for 5 minutes or until soft.
Add the sugar & the vinegar, cook for a few minutes until the onions go golden & caramelized. Spoon into a bowl & cool completely.
Place the flour, cheese, thyme & nearly all the onions into a bowl, reserve 1 tablespoon of the onions. Give everything a stir, then add the milk, oil & egg.
Grease & line a 18cm x 10cm loaf tin. Pour mixture into tin, sprinkle with remaining onions, thyme & extra cheese.
Bake at 180 degrees for 50 to 60 minutes. Cool in tin for 5 minutes, then serve warm with butter.
