Cauliflower Alfredo Sauce

Oh deliciousness!!!!  I am actually amazed at the taste of it! I’m thinking of all different ways to use it! First one being a sauce for stuffed Spaghetti Squash!

Here are the ingredients:

1 Small head of Cauliflower (I used half white and half yellow)

3 Cloves of Fresh Garlic

1 Teaspoon Herb Salt (you can make your own using himilayan or rock salt and blending with dried herbs)

1/2 Cup of Chicken Stock (I use Vegeta Chicken Stock Powder and hot water)

1/4 Cup of No Fat Natural Greek Yoghurt

1/4 Cup Skim Milk

1 Tablespoon of dried Chives (If serving the sauce immediately use fresh or parsley)

What to do:

Cut the cauliflower in florets, add to a saucepan with the garlic and herb salt. Cover with water and bring to the boil. Simmer until the Cauliflower is tender and drain.

Add the Chicken Stock, Yoghurt, Skim Milk and Chives.

Blend in a blender or use a stick mixer to blend until smooth.
