Chicken Carbonara….. OMG… YUM!

Chicken Carbonara never tasted SO good! I am amazed actually at how well this dish turned out! Simple, tasty and a lower fat alternative.

400 Grams of Chicken Breast diced
1 Rashers of Bacon diced
4 Large Button Mushrooms Sliced
1 Clove of fresh Garlic Crushed
1/2 Teaspoon of YIAH Porcini Salt
1 Tablespoons of YIAH Tuscan Style Capsicum Pesto Dip Mix
1 Tablespoon of Intense Garlic Olive Oil Blend
375 ml of Carnation Light & Creamy
1 Tablespoon of Cornflour

Heat a non stick frypan. Add the Garlic Olive Oil, Garlic, Bacon, Mushrooms and Dip Mix. Saute until the Mushrooms are tender and set aside. Brown the Chicken and add to the Mushrooms and Bacon. Dissolve the Cornflour in the Light and Creamy and add to the pan. Add the Porcini Salt. Simmer and stir the sauce until it starts to thicken. Return all of the other ingredients to the pan and stir to combine. Serve with Pasta of your choice. I served with Guilt Free Fettuccine.
