What do you do with left over Roast Chicken? I love to create a new meal out of the leftovers and it saves a packet each week on my shopping bill using ingredients that I already have in the fridge and pantry.
What you will need:
Leftover Roast Chicken Diced
(cook up some fresh diced chicken if you are not using leftovers)
Diane Sauce
Cooked and mashed pea’s
Cooked and mashed Potatoes
Dried Herbs, Cracked Pepper and Salt
What to do:
Firstly I make my cheats Diane Sauce using the leftover gravy and some cream. I always make homemade gravy with the pan juices after roasting any meat and adding cream is a really great shortcut in creating a new sauce that is delicious in pies. If you are making your sauce from scratch use the following recipe. I’ve added sliced mushrooms to mine, then add the chicken.
Easy Diane Sauce Recipe: 1 tablespoon olive oil, 1 small brown onion finely chopped, 1 clove garlic crushed, 2 tablespoons Worcestershire sauce, 2 tablespoons tomato sauce, 2/3 cups (160ml) cream. Heat medium frying pan over medium heat. Add oil, onion and garlic. Cook, stirring for 3 minutes or until onion has softened. Add remaining ingredients. Bring to the boil. Simmer, uncovered, for 3 minutes or until sauce has thickened slightly.
Add the chicken to an oven proof individual ramekin and top with the mashed peas
Top with mashed potato, a sprinkle of dried herbs, cracked pepper and salt and some grated cheese, pop into a pre-heated oven until heated through and golden
