My friend Kathleen loves to cook and is a little like myself in the fact she makes things up as she goes along with out really
measuring anything! Here’s her yummy recipe for Mexican Rice that literally cooks itself!
Mexican Rice – Recipe by Kathleem Lynch
1.5 Cups of Rice
1 Onion diced
1 clove of crushed Garlic
1 teaspoon Cumin powder
1 teaspoon Chilli Powder
1 Teaspoon of Sweet Paprika
3 Cups of Chicken stock
3 Tablespoons of Tomato paste
1/2 cup of Frozen peas corn & carrots
Throw it all in Rice cooker and turn it on and stir occasionally. Yummy if it sticks and crusts a little.. Serve with Chicken Fajita!
