I love how easy this curry is to throw together! And SO much flavour with only a few ingredients!
Ingredients:
400 grams of Chicken breast diced
1 Red Onion finely diced
2 tablespoons of Korma Curry Spice Blend
1 400g tin of Coconut Milk
1 teaspoon of Cornflour (Optional)
What to do:
Heat a fry pan and brown the chicken on all sides and set aside. (TIP: Do not cook all the way through as you add it back to the pan with the sauce and it will overcook and be tough!)
Add the red onion to the pan and saute until soft. Add the Korma Curry Spice Blend and half of the coconut milk. Combine the remainder of the coconut milk the the cornflour and add to the pan. Stir until it starts to thicken and then add the chicken back to the pan. Continue to stir and cook for a few minutes until the chicken is cooked through.
Serve and ENJOY! I’ve served with steamed veggies that I sprinkle with some extra Korma Curry Spice Blend so that I can stick the Gut Health & Wellness Program I am doing at the moment.
