Delicious and simple recipe for Zucchini Slice! Freezes and reheats well too. Great for the lunch boxes or an easy dinner served with salad.
1 Large Zucchini grated
1 Large Carrot grated
1/2 Red Capsicum finely diced
Large handful of Baby English Spinach
6 Free Range Eggs
1/2 Cup of Parmesan
1/2 Cup of Organic Coconut Flour
1 Tablespoon of YIAH Emperorers Garden Dip Mix
Cracked YIAH Chai Shiraz Four Pepper Blend & Yiah Porcini Salt to season.
Mix everything together in a bowl and pour into a lined slice tin.
Bake at 180 C for 25 – 30 mins or until golden and cooked through.
