Who doesn’t love a Roast Chicken Dinner? Easy to prepare, around an hour to cook and absolutely scrumptious flavours!
Ingredients:
1 whole chicken
1 can of beer
2 teaspoons of French Onion Twist Spice Blend
1 tablespoon of Roasted Garlic Smash Olive Oil
2 teaspoons of crushed garlic
2 teaspoons of worstershire sauce
Veggies of choice – Stockmans Whip Salt to season
What to do:
Firstly make your marinade while drinking half the can of beer. Mix together the French Onion Twist Spice Blend, Roasted Garlic Smash Olive Oil, garlic and worstershire sauce. Preheat your oven to 180c.
Place the half full beer can inside of the chicken cavity and sit upright in a large roasting pan. Use a beer can chicken stand if you have one.
Pat the chicken dry with paper towel and baste with the marinade. Add your prepared veggies of choice around the bottom of the chicken. I’ve used potatoes, pumpkin, zucchini, cauliflower and carrots. I lightly coat the veggies in Roasted Garlic Smash olive oil and Stockmans Whip Salt to season.
Place the baking tray into the oven and roast for approximately an hour depending on the size of your chicken. I like to turn my veggies every 15-20 minutes so they are golden on all sides.
To test the chicken for readiness use a meat thermometer by inserting into the leg and thigh, the temp should be 170-180 and when removed the juice will be clear. Alternatively you could use a skewer, If the juices are clear it’s ready. This is the most juiciest and moist roast chicken you will ever cook!
