Fried Rice… Simple & Inexpensive!

I love making fried rice and make it different each time depending on what ingredients I have on hand at the time. You can really add whatever you like in the way of vegetables and cooked meats. I have used Pork & Prawns, Chicken & Bacon combo is also pretty delicious!

 This recipe will serve 4.

Ingredients:

2 Cups of Cooked diced Pork ( I had some left over from Roast Pork)

8 – 10 Green Prawns peeled and cleaned

2 Cups of Cooked Rice ( I have used Red Raw Rice)

4 Button Mushrooms Sliced

1/2 Red Onion Diced

1 Large Brussel Sprout Sliced

1 Small Carrot Diced

1 Small Zuccini Diced

Handful of Green Beans Sliced

1/4 Red Capsicum Diced

1/2 Cup of Frozen Peas

1/2 Cup of Frozen Corn

Soy Sauce to taste ( I use approx. 2 Tablespoons)

1 Tablespoon of Olive Oil

For the Omelette:

2 Free Range Eggs

1 Teaspoon of Soy Sauce

Cracked Sea Salt & Pepper

Splash of Skim Milk

1 Teaspoon of mixed dried herbs of choice ( I use an Italian Blend)

What to do:

Start by cooking you omelette. Whisk the ingredients and pour into a hot non stick pan sprayed with cooking spray. I put the lid on the frypan and let it cook almost all the way through and then flip it over. Roughly chop and set it aside.

In the same non stick frypan add the vegetables and sauté  until soft. Move to one side of the pan. Cook the prawns until golden on each side and cooked through. This only takes a few minutes.

Add the pork, cooked rice, olive oil and soy sauce and toss to combine. Add the omelette and your done! ENJOY a quick and easy simple dinner!
