Healthy Breakfast Quiches…makes 4 large muffin sized serves. For the base: 2 X Rye Mountain Bread. Filling: 2 sliced mushrooms, 2 slices of lean short cut bacon and 1/4 small red capsicum diced, 1 tablespoon of #Yiah Emperors Garden Dip Mix, free range egg and a sprinkle of freshly grated parmesan. Grill the mushrooms, bacon and capsicum and add the dip mix. Slice the mountain bread into 4. Spray a large muffin tin with cooking spray. Add 2 squares of the mountain bread to each. Add the filling, egg and top with the parmesan. Bake in a preheated oven until the egg is cooked to your liking.
