These mini meatloaves are the easiest you will ever make and are delicious warm with veggies or cold with salad. They freeze well and you can warm them up and have them with salad on a burger! They are also low carb and gluten free! Mix up the flavours by using different herb mixes or add some chilli if you like them spicy. The ideas are endless, this is just a very basic recipe that is so easy to modify to your own flavour tastes.
Ingredients:
500g of beef mince
1 free range egg
1 tbs of mixed italian herbs
2 rashers of bacon finely diced
1 onion finely diced
3 cloves of roasted garlic chopped
1 teaspoon of garlic powder
1 tbs of dried or fresh parsley
2 tbs of smokey BBQ Sauce
cracked mixed pepper and salt
coconut cooking spray
What to do:
Preheat the oven to 180c and spray a 6 hole texan muffin pay with coconut cooking spray. Mix all of the ingredients in a bowl and press evenly into the muffin tray.
Bake for 20 minutes and then flip them over and bake for another 15 or until the internal temperature reaches 160c. Cover with foil and let them sit.
My best tip.. roast your own garlic and store it in the fridge covered in extra virgin olive oil
