Roasted Sweet Potato & Cashew Dip

Ingredients:

200 Grams of Roasted Sweet potato

(I roast whole sweet potato in the skins and then peel while still warm)

3 Cloves of Roasted Garlic

1/4 Cup of Raw Unsalted Cashews

1 Teaspoon of Ground Coriander

1 Teaspoon of Ground Cumin

Sprigs of Mitsuba (Japanese Parsley)IMG_8270[1]

Blend in a small food processor until smooth.

Serve with Raw Veggies or Roasted Oven Baked Home made Tortilla chips
