Here is a simple recipe for a low fat Potato Bake that still has all the flavour without the fat!
Ingredients:
3 Medium Potatoes Peeled and thinly sliced
3 Rashers of Bacon diced
1 Onion Diced
2 Cloves of fresh Garlic crushed
1 Tablespoon of Yiah Country Onion and Chives Dip Mix
1 Cup of Skim Milk
2 Tablespoons of Cornflour
2 Cups of Chicken Stock
What to do:
Use a frypan you can use on the stove top and then pop into the oven. (If you don’t have one that’s fine just use a non stick fry pan and transfer into an oven dish) I find this speeds up the cooking time and I love the fact you are only using one pan!
Heat your frypan to medium heat and sautee the bacon, onion and garlic. Add the chicken stock and the sliced potatoes and bring to a quick simmer. Simmer for around 5 mins. Dissolve the Corn flour in the milk and add the Yiah Country Onion and Chives Dip Mix. Add to the frypan and stir gently until it is combined and the sauce begins to thicken. Pop into a preheated oven at 180 C until the potatoes are tender and the top is golden, approx 25 mins. You can add grated cheese to the top if you wish but it really doesn’t need it.
