The comfort of home cooking has come to life with these DELICIOUS Slow Cooked Lamb Shanks…… OMG am I popular at home right now!
Ingredients:
4 Lamb Shanks
2 Tablespoons of YIAH Tomat0 & Herb Dip Mix
2 Tablespoons of YIAH Intense Garlic Olive Oil
1 400 Gram tin of diced tomatoes
1 Cup of Beef Stock
1 Can of Guinness
1 Onion sliced
2 Cloves of Fresh Garlic finely diced
1 Tablespoon of Cornflour dissolved in a cup of water
What to do:
You can either cook these in your Slow Cooker or in the oven. I decided on the oven this time around! If you have an oven dish with a lid that you can start the cooking on the stove top.. PERFECT. I use the Chef’s Tool Box Roasting Pan. If not start in a frypan and then cook in an oven proof dish with a lid or one you can cover with foil. Brown the Onions and Garlic and place the Lamb Shanks on top. Sprinkle the Tomato & Herb Dip Mix over the top. Brown the Lamb on both sides.
Add the tin Tomatoes, Beef Stock & Guinness and bring to a simmer. Preheat your oven to 160 degree C. Place into the oven and cook uncovered for an hour, turning half way through, cover and cook for an additional 2 hours or until the meat is literally falling off the bone.
Remove the shanks from the baking dish and place the baking dish back onto the stove top to make your sauce. Simple remove any excess fat produced from the meat from the pan. Add your cornflour and water mix and bring to a simmer. Cook until thick and glossy, add more water if needed to make your sauce a nice consistency.
