Slow Cooker Roast Chicken

I can’t remember ever cooking a chicken in the slow cooker… maybe once many moons ago! I made my own little spice blend yesterday to coat the chicken. I hear most people lay there chicken on the veggies… I used a trivet and put the veggies underneath. This post will have to be a work in progress as I didn’t take any after pics…. I know wow right. With all the drooling going on it got pushed to the side! Man of the house was asking what I was doing packing up leftovers stating that he wasn’t finished yet! Anyway without any further ado.. here is my blend. TIP: Always make just enough, fresh is best and it doesn’t keep well like store bought with those crap anti-caking agents in them 😉

Roast Chicken Spice Blend:

2 teas smoked paprika
1 teas onion powder
1 teas garlic powder
1/2 teas ground cumin
1/2 teas ground nutmeg
1/2 teas celery seeds
1/2 teas of dried parsley
1/2 teas cracked himalayan salt

ps.. a whole lemon in the center of the chicken always goes down well but in this house I am only allowed to put lemon in my drinks haha. Next time I won’t forget the after pics I promise! Slow Cooker Roast Chicken

Ingredients
  • Roast Chicken Spice Blend:
  • 2 teas smoked paprika
  • 1 teas onion powder
  • 1 teas garlic powder
  • ½ teas ground cumin
  • ½ teas ground nutmeg
  • ½ teas celery seeds
  • ½ teas of dried parsley
  • ½ teas cracked himalayan salt
Instructions
  1. Pat the chicken dry with paper towel
  2. Mix all of the spices together and sprinkle all over the chicken
  3. Place a trivet in your slowcooker and sit the chicken on top
  4. Cook on the high setting for 1 hour
  5. Add veggies of your choice under the trivet
  6. Cook on low for 4 hours or until 170c or until you insert a skewer and the juices run clear
  7. Place the chicken and veggies on a tray and place into a preheated hot oven for 10 - 15 minutes to crisp up the skin of the chicken
  8. Make gravy from those delicious juices left in the bottom of the slowcooker
