Poor Man: For the family
1.2 kg marinara mix from Coles/Woolworths
Rich Man: For a dinner party
1 large fillet of fresh salmon (skin off)
1-2 handfuls of fresh uncooked prawns
1-2 handfuls fresh squid rings
1 large fillet of fresh white fish (Barramundi is my favie)
6-8 fresh scallops
10-12 fresh mussels
What to do:
1 tbsp E.V.O.O & 2 tbsp butter
1 large leek (finely sliced)
4 rashers of streaky bacon (sliced into strips or diced)
1 large potato (peeled and cubed – 1cm)
2 carrots (peeled and cubed – 1cm)
½ to 1 cup of plain flour (depending on how thick you like your chowder)
1 litre of Fish stock
Juice of 1 lemon
200 ml thickened cream
Handful of fresh parsley (chopped)
Salt & Pepper to season
- Add oil & butter to large pot and heat on medium heat. Add leek, bacon, potato and carrot and sauté until the leek is translucent. Add flour and cook off for a few minutes using a wooden spoon to scrap the bottom of the pot.
- Add fish stock and stir.
- Once the sauce starts to boil slowly add your seafood. Starting with the Salmon, 1 min later add Prawns, Squid and Mussels, then another minute later add the white fish and scallops.
- Finish off with adding the lemon juice, cream and fresh parsley. Season after tasting as can sometimes already be quite salty.
Serves 4-8 depending on serving size. Bon appetite!
