Tunisan Cauliflower Rice

What a delicious litte experiment! I have never tried Cauliflower Rice before but have been meaning too for ages! Tunisan Couscous Blend is a medium-hot blend with almonds, inspired by harissa and is amazing with lentils, chickpeas and vegetables. I have made enough for 2 servings as a side dish.

Here’s the ingredients you will need:

(you can really use whatever vegetable you have on hand)

4 large florets of cauliflower processed

(this is only a small amount so I used the bowl on my stick mixer. Best to use a food processor for larger amounts)

4 button mushrooms sliced

1/4 red capsicum diced

1/2 zucchini diced

1/2 red onion diced

1 tablespoon on YIAH Intense Garlic EVOO

1 tablespoon of YIAH Tunisan Coucous Blend

1 Teas YIAH Porcini Salt

What to do:

Heat a non stick frypan to medium heat. Combine the EVOO and Tunisan Couscous Blend and add to the pan with all of the veggies except the cauliflower,  saute for a few minutes until almost tender. Give it a good stir to release and combine the flavour. Add the cauliflower and stir to combine. At this point I turn down the heat to low  and pop the lid on the frypan to let the flavours infuse while the cauliflower cooks which only takes a few more minutes.
