Nothing goes to waste in my kitchen! This was so easy to throw together after a long work day. I had some left over Lamb from our Aussie Day Roast Spit Roast yesterday so have gone old school and used the left overs in Shepherd Pie with a twist! Dinner for 2!
Ingredients:
Diced Roast Lamb (I didn’t measure but it would be approx 300 grams)
YIAH Intense Garlic Olive Oil
1 Tablespoon of YIAH Tomato and Herb Dip Mix
1 Tablespoon of Tomato Paste
2 Cups of Beef Stock (I like to use Beef Stock Powder and make my own)
I Onion diced
1 Clove of Garlic finely diced
1 Large Carrot peeled and diced
1/2 Cup of Frozen Baby Peas
What to do:
Heat a frypan and saute the onions and garlic in a splash of YIAH Intense Garlic Oil. Add the Tomato and herb Dip Mix and stir to combine. Add the Bacon and Mushrooms and saute until almost crispy. Add the Beef Stock and Tomato Paste and stir to combine. Add the Carrots and Lamb and bring to a simmer, then add the Peas. Simmer for around half an hour until the Lamb is soft. Thicken with Cornflour and water mix. Simmer and stir until the sauce is thick.
I have topped the Man of the houses with mashed Potato (added some YIAH Country Onion and Chives Dip Mix) I topped mine with Sweet Potato and Cauliflower Mash and the same Dip Mix.
