Curry Pork Stirfry

Love a good healthy curry flavoured recipe…. here’s one for you that I made during the week. Sticking to a Gut Health Program is super simple and you will feel amazing for it!
Title: Curry Pork Stirfry (1 Serve)

Ingredients:
100 grams of sliced cabbage
50 grams of sliced mushrooms
50 grams of julienne carrots
50 grams of sliced capsicum
1 small spring onion sliced thinly
90 grams of sliced pork fillet
2 teaspoons of Curry of choice (I use a Korma Curry Spice Blend)
Method:
Heat a non stick pan (I prefer a cast iron frypan with a lid)
Brown the pork on both sides and set aside.
Add the mushroom, carrot and capsium the pan and saute until half way tender. Add the cabbage and the spice blend and stir to combine. Add a few splashed of water and pop on the lid. Give it a few minutes and give another stir. Saute until the cabbage is as tender as you like it. Add the pork back to the pan and add the spring onion. stir to combine.
Serve and enjoy 🙂
