Moroccan Cabbage Stir-Fry

I love creating new recipes from whatever I have in the fridge and on my spice rack.. ideas are endless if you have some imagination! This recipes serves only one. Mr fussy would NEVER eat this and I’m sticking to my gut healthy way of eating to some extent, stick to around 100 grams of lean protein and 200 – 250 grams of low carb veggies and you are on a winner! Cabbage is the base of this recipe,  you could mix up the veggies and add some carrot or capsicum and some shallots or red onion is delicious too, I was just using up what I had in the fridge.

Ingredients:

50 grams of  diced bacon

50 grams of finely sliced chorizo

100 grams of shredded cabbage

30 grams of freshly sliced beans (approx 6)

30 grams of finely sliced red brussel sprouts (2)

30 grams of sliced swiss button mushrooms ( approx 3)

30 grams of sliced zuccini (1/2 small zucchini)

2 teaspoons of Moroccan spice (I use Morrocan My World Flavourista Spice Blend.. it really is out of this world!)

 

What to do:

Heat a non stick frypan and spray with cooking spray. Add the diced bacon and chorizo and saute until golden. Remove  from the pan. Add the veggies and the spice blend and saute until golden and just tender. Add the bacon and chorizo back into the pan and stir to combine.

That’s it! How super easy is that, not to mention a healthy meal. Bacon and Chorizo are on my “sometimes” food list. I often substitute with diced chicken breast to reduce the fat content  but on days like today I decided to live a little!
