Prawn Fritters…. yum yum yum! Easy to make and absolutely delicious!
Ingredients:
500 grams of fresh green prawns peeled and diced
1.5 cups of grated mozzarella cheese
1/4 cup of whole egg mayonnaise
1 large free range egg
1 Tablespoon of freshly chopped parsley
1 Tablespoon of freshly chopped chives
cracked pepper and himalayan salt to season
1/4 cup of plain flour
oil of choice for frying, I use grape seed or rice bran (high heat cooking oil)
What to do:
Add all of the ingredients to a bowl and mix until combined.
Heat a fry pan to medium to high heat and add a few tablespoons of oil. Use a large dessert spoon and add dollops to the pan, like you would making pikelets. Cook for approx 2-3 min or until golden on the bottom when you flip them over. Cook for a further 2-3 minutes on the other side or until cooked through and golden.
Serve with your favourite Aioli. Lemon would be a favourite! Simply mix up 1/2 cup of whole egg mayo, add a few tablespoons of fresh lemon juice and a bit of the zest and a clove of fresh garlic.
