OMG!!!!!! Keto bread rolls! These are delicious and so yummy you will not miss bread on the Keto Diet!!!! This recipe has been adapted from dietdoctor.com I altered the method a little and skipped the sesame seeds… No hand mixer required for this recipe. This is an AMAZING recipe!! Crunchy on the outside and soft and fluffy in the middle! WINNING!!!!!
Ingredients
3/4 cup of homemade almond flour
3 1/2 tablespoons of ground psyllium husk powder
1 heaped teaspoon of baking powder
1/2 teaspoon of cracked himalayan sea salt
1 1/2 teaspoons of organic apple cider vinegar
2 free range egg whites
2/3 cup of boiling water
Sesame seeds are optional
What to do:
Preheat the oven to 180 C. Add the dry ingredients to a bowl. Whisk the eggs white in a cup for 30 seconds. Add the eggs whites, boiling water and apple cider vinegar to the dry ingredients and mix together with a spatula until combined. Be careful not to over mix or the rolls will be tough… Using wet hands form 4 dough balls and place on to a baking tray lined with baking paper. Bake for approx 50 minutes.

I am following the recipe and in the oven it looks amazing till about 10 minutes before the time is up then the buns fall pretty flat. What am I doing wrong?

I am really not sure hun, these are perfect every time for me. I think the trick for me is really having that oven pre-heated, never opening the oven to see how they are going no matter how tempting and working quickly to get them into the oven, don’t let the dough stand for too long. I hope this helps 🙂

This is amazing!!! I am a bread person. I have to have bread, but I am diabetic so it is pure poison for my body.
Since I’ve been eating these rolls, my sugar has dropped so much, so so much, hundreds of points. I’ve tried before many other almond flour/keto recipes and the results were disastrous, leaving me with no hope that I can eat but also be healthy.
