Bit of a twist on my Turmeric Cauliflower Rice. Made for lunch the next few days. I’ll be serving one day with salmon amd another with meatballs or chicken breast
Ingredients:
300 grams of Fresh cauliflower rice
100 grams of finely diced zucchini
100 grams of finely diced capsicum
1/2 onion
1 teas Turmeric
Cracked Salt and pepper to season
Fresh parsley
Method:
Heat a non stick pan to medium heat. Add the zucchini and capsicum and sauté until 1/2 cooked.
Add the cauliflower rice, turmeric, parsley, salt and pepper and stir to combine.
Add about 1/4 cup or less of water and put on a lid. Stir after a few minutes and pop the lid back on. Cook until the cauliflower is as tender as you like it.
